Hygiene Training
Our Environmental Health Service is currently offering free
Scores on the
Doors seminars as well as training courses leading to a formal
qualification. The aim of the food hygiene training offered is to
ensure that everyone involved in the food business, from junior
staff to senior management, possesses the necessary skills and
knowledge to prevent any risk of food poisoning by carrying out
their tasks hygienically, giving you a more efficient and cost
effective business. The free seminars are specifically aimed at
introducing businesses to the Council’s Scores on the Doors
scheme and Safer Food Better Business (SFBB)
resources.
The Environmental Health Service has considerable up to date
knowledge and experience of food safety and hygiene issues and is
able to help you meet the training requirements of your
organisation.
Scores on the Doors Free Seminar
This informal seminar aims to provide information on the
Council’s Scores
on the Doors scheme.
The seminar is aimed at those who are new to running a food
business within the Borough of Ashford and want to know what
Scores on the
Doors is all about. It is also aimed at those who want to
improve their current star rating.
The course also provides information on the SFBB pack as developed by
the Food Standards Agency (FSA). This provides an innovative and
practical approach to food safety management. It has been developed
to help small businesses put in place food safety management
procedures and comply with food hygiene regulations.

All students receive a copy of the SFBB pack which includes a
DVD that helps you to use the pack and train your staff. Resources
are also provided on starting a food business including check
sheets.
Length of Course
The seminar consists of a half-day afternoon session (3
hours).
Course Certificate
All candidates will receive a certificate of attendance.
Level 1 Award in Food Safety in Catering
This course is certified by the Chartered Institute of
Environmental Health (CIEH) and the candidate will sit the
CIEH
examination.
The course is suitable for a variety of candidates including new
employees with minimal or no prior food safety knowledge, employees
handling low-risk or wrapped food or those who work front of house,
such as waiting or check out staff, as well as back of house such
as kitchen porters or warehouse staff.
Content
The qualification provides an introduction to food safety and
focuses on the following areas:
- Introduction to Food Safety (food hygiene, hazards,
responsibilities)
- Personal Hygiene
- Cleaning
- Contamination
Candidates learn through a variety of methods including
lectures, slides, videos and discussions to highlight the basics of
safe food handling. All students receive an illustrated
handbook which has been written specifically to complement the
course.
Length of Course
The course consists of a half-day morning session (3 hours),
plus a 15 question multi-choice test at the end. Arrangements may
be made for the test to be taken in a written or oral form.
Qualification
All successful candidates will receive the nationally recognized
Level 1 Award in Food Safety in Catering issued by the
CIEH
.
Level 2 Award in Food Safety in Catering
This course is certified by the CIEH and
the candidate will sit the CIEH
examination. The course will benefit anyone working in a
situation where food is prepared, cooked and served. Relevant to
all catering businesses, for example, pubs, hotels, restaurants,
retail, travel, contract catering, fast food outlets, in hospitals,
care and nursing homes and schools.
Content
The qualification provides an introduction to food safety and
focuses on eight key areas:
- The law
- Food safety hazards
- Refrigeration, chilling and cold holding of foods
- Cooking, hot holding and reheating of foods
- Food handling
- Principles of safe food storage
- Cleaning
- Food premises and equipment
Candidates learn through a variety of methods including
lectures, slides, videos and discussions to highlight the basics of
safe food handling. All students receive an illustrated
handbook which has been written specifically to complement the
course.
Length of Course
The course consists of a one day intensive session, plus a short
multi-choice test at the end. Arrangements may be made for the test
to be taken in a written or oral form.
Qualification
All successful candidates will receive the nationally recognized
Level 2 Award in Food Safety in Catering issued by the
CIEH
.
What’s the Cost?
- The Scores
on the Doors seminars are FREE.
- The Level 1 and Level 2 courses are both priced at £58.00 per
person, which covers all course materials, course handbook and
examination costs.
- The cost of the Level 2 course is discounted to £30.00 per
person for those who have previously attended our Level 1
course.
- Those attending the Level 1 course are also welcome to stay for
the free Scores
on the Doors seminar which is run in the afternoon.
- Permits are issued to those attending the courses to cover the
cost of parking at the Civic Centre.

Course Refreshments
Hot and cold drinks and biscuits are available throughout the
courses and seminars. Lunch is not however provided for the full
day course.
Company Training
Block bookings can be made for between 10 and 25 candidates per
course. We can be flexible in arranging the dates and venue to suit
